I took a coffee tour and here they are explaining the different stages of the coffee bean, as well as demonstrating the different scent elements that can be part of the coffee.

This is used to take the soft fruity part away from the coffee bean. Colombia uses a washed bean process because of their specific climate, and this is part of the washing process.
